The nature and the landscape of the Iblean mountains are the mirror of a sunny and Mediterranean land, which has founded on agriculture and more traditional crops such as olive trees the basis of its civilization. For generations, the Cutrera family has dedicated itself with passion and love to the production of Sicilian extra virgin olive oil.

The olives are harvested strictly by hand so as not to damage them before pressing, this operation has been repeated for centuries in the same way, handed down from father to son.

The strength of the company is based on the technique of extraction, this adapts to the variety and degree of ripeness of the olives, thus obtaining intense and balanced fruity oils.

The oil obtained has the following characteristics: Appearance – clear and slightly bright or opaque if not filtered. Colour – emerald green with golden reflections. Taste – fruity with a bitter and spicy aftertaste. Smell – full, pleasant and fresh

The olives are processed in the oil mills within six hours of harvesting and all processing operations are performed with strictly cold extraction.

Cold pressing allows the nutritional and physical characteristics of Sicilian extra-virgin olive oil to be maintained unaltered, preserving its properties intact and enhancing the benefits that derive from it once consumed.
