Cooking plum tomatoes for 15 minutes breaks the cell wall, which releases lycopene, a valuable antioxidant, which is believed to reduce the risk of certain cancers and also acts against high cholesterol.

Sicibia plum tomatoes do not follow the cold chain after harvesting and are not left to ripen in cold stores, the cold in fact interferes with the enzymes that give the product its characteristic taste.

Why do we recommend storing tomatoes in dry place and not in a fridge? Below 12°C, the tomato stops ripening, which is exactly what gives it its most flavor.
